On June 15 twenty-two Penn State University students visited Larderia Guadagni in Colonnata, the Tuscan hamlet where “lardo” has been made since Roman times. They toured the facilities, listened to a presentation on the history and production of the pork back fat, and learned about current issues the industry is facing. As part of the visit, the students sampled the company’s delicious products during lunch served at its “trattoria”. The course is IB399: Italian Business, Government, and Society taught by Penn State professors Terrence Guay and Vernis Welmon. The group was accompanied by Nienke Scholten of ISI Florence.
